Low Carb Stuffed Peppers

Low Carb Stuffed Peppers :heart:
8 Peppers any color
2 large jars of Ragu, or homemade sauce.
2lbs Lean ground beef
1 eggplant
2 zucchini’s
1 package of sliced mushrooms
1 onion
Parsley
2 tablespoons of crushed garlic
1 small ricotta cheese
1 package of mozzarella shredded cheese
1 egg
1tablespoon of Italian seasoning
Preheat oven to 350
Dice the onions, Shred the zucchini and eggplant with a cheese shredder.
Sauté in a fry pan adding the crushed garlic and mushrooms. Let cool down
In a bowl mix the ricotta cheese with the eggs and some dried parsley
In a large bowl mix all the ingredients with the hamburger.
Clean peppers cut the top off and clean out the seeds.
Stuff with mixture.
Place peppers in a shallow baking dish adding the sauce around the peppers. Bake 1 hour or until tender… It sounds complicated but really is very easy...

I halved this recipe, except for eggplant, egg, and package of sliced mushrooms (used one whole one of each).

The vegetables REALLY stretched that one pound of burger, LOL!!!! It makes a TON of soft, moist, delicious filling that's great for you!

Actually, we had SIX red peppers, which we filled, then piled the rest of the filling over the top :w00t:. Baked the whole thing at 375 for about an hour and a half.

Terrific recipe, Trish!!! This will be two meals for us, plus a couple of lunches for me during the week!
