Broccoli Salad w/ bacon!!!!!!

Broccoli Salad

5 or 6 bunches of Broccoli - cut into bite size pieces
6-7 green onions - sliced thin
1 lb. bacon cooked and crumbled on top

1 c. miracle whip
3 T. sugar
3 T. vinegar


Mix all together and let sit for at least 1 hour.

I know I used the wrong term for 'bunches' of broccoli ...so to be clear on that, we were shopping last night and bought two bundles at the local Krogers grocery store. Each of those bundles had 3 or 4 stalks of broccoli .....so we will use all seven of the stalks in the broccoli salad. You all probably knew this ...but just in case I figured I'd be as clear as possible. :D

DH and I love this salad, and I sometimes add raisins. I also blanch the broccoli for a few minutes at the beginning...this eliminates any "woody" texture and makes it an even prettier green.

Raisins sound good too. As long as we have some handy I'll try them in our broccoli salad this weekend. :thumb: good idea Karen!!!!! :tiphat:

This is very similar to Doc's recipe.

Just made it for the first time this past weekend and I LOVE it!

Pictured before and after tossing with the dressing.

Broccoli Salad

Ingredients
· 2 heads fresh broccoli, stems removed
· ½ red or sweet onion, sliced thin
· 6-7 slices bacon
· 1/2 cup raisins
· 1/2 cup slivered almonds, toasted
· 1 cup mayonnaise
· 1/3 cup white sugar
· 2 tablespoons red or white wine vinegar


Directions

1. Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.

2. Cut the broccoli florets into bite-size pieces, and blanch in boiling water 1 minute and cool immediately in cold water. Cut the onion into thin slices. Combine with the bacon, raisins, your favorite nuts and mix well.

3. To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.
