Spanish Green Beans with Ham, Almonds, Smoked Paprika

Spanish Green Beans, Ham, Almonds, Smoked Paprika – adapted from Milk St.

Ingredients
• 4 TABLESPOONS EXTRA-VIRGIN OLIVE OIL, DIVIDED
• ½ CUP SLIVERED ALMONDS
• 2 OUNCES THINLY SLICED SERRANO HAM OR PROSCIUTTO, SLICED INTO ¼-INCH-WIDE RIBBONS
• 2 MEDIUM GARLIC CLOVES, MINCED
• 1 POUND GREEN BEANS, TRIMMED AND HALVED
• KOSHER SALT AND GROUND BLACK PEPPER
• ½ TEASPOON SMOKED PAPRIKA
Top with poached egg (optional)

Heat 2 T. oil over medium heat. Add the ham (I used prosciutto), garlic and almonds and cook until the ham is crisp and the almonds are toasted. Remove mixture to a bowl.

In the same skillet, heat the other 2 T. of oil and heat until smoking. Add the green beans and pepper (the prosciutto is salty enough). Cook until beans are charred and tender, stirring only a couple of times.

Serve beans, sprinkled with smoked paprika and topped with ham/almond mixture.
