Apple Coleslaw

At family gatherings, we each bring our specialty dishes, but we would take turns making coleslaw. That is because none of us did it very well. So a few years ago when it was my turn, I searched the web for a recipe that everyone would love and found this gem. Ever since, I have been the official coleslaw maker.

The original recipe had no amounts on any of the veggies, walnuts or fruit, so you can make as much or as little as you want. In parenthesis, I have included the amounts of fruits and veggies I use. Of course for a big batch like this, I have to double or triple the dressing part of the recipe.

Apple Coleslaw

cabbage, shredded (1 head)
carrot, shredded (1 small)
celery, thinly sliced (1 rib)
Red Delicious apples, diced (2 medium)
coarsely chopped walnuts (1/2 cup)
raisins (I stir in a whole lot of these.)

Dressing:

1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon lemon juice
3 tablespoons sugar

In a large bowl, stir together the vegetables and apples. Next, stir in the walnuts and raisins. In a small bowl, stir the dressing ingredients together, then stir the dressing into the apple slaw. Keep refrigerated.

i made 1 instinctually, & i cannot say that that was not delicious. appreciate your post, Granny~ sure got me thinkin' of Holiday season.
