I have a lemon tree that is out of its ever loving mind! It was bought as a dwarf but it had other ideas. I recently bought two cookbooks that are all about lemons. One is Luscious Lemon Desserts and the other is The Lemon Cookbook. However I have a recipe for chicken that an Egyptian friend gave to me. Actually it's not so much a recipe but a little of this and a touch of that. Very typical of ethnic cooking. Have fun coming up with your own version.

Chicken breasts although you could use other parts.

Juice from two or three lemons.

1 medium onion

Garlic to taste. I use four good sized cloves.

You put the juice, onion and garlic into a blender and turn it into a slurry. If it's too thick I just add more lemon.

Marinate the chicken in this for an hour or so. Rinse the chicken and discard the marinade unless you can think of something to do with it. You'll have to cook it if you decide to make a sauce out of it due to the chicken juice.

Fire up the BBQ and cook them. I add Italian Spice to the breasts as they cook.

If you marinade the chicken in this mixture too long it will be very tart. I did that once (overnight) and really heard from the family especially the kids.
