Dirt Simple DO BBQ Chicken

This is my first real meal cooked in the DO that I salvaged in the other Thread. I have made some things in the DO since re-seasoning but this is the first edible meal.....we hope.

The disclaimer, I am not a cook and am new to DO cooking. My intent is to learn this skill (and share with others to encourage others) so that I can use it camping and hunting.

in the photos you can see the components
3 to 8 pieces of chicken....I used 3 dark meat thighs, boneless, skinless.

one small cola, for 3 chick pieces ... 12 ouncer for 8 pieces

about a quarter of a green bell pepper
about a quarter of red bell pepper
(There is plenty of goo if you like to add more bell pepper)

pineapple chunks, I used one snack cup full without the juice (I drank it!!)

one bottle of BBQ sauce

A slice of bacon and some olive oil.

Preheat the DO, with 17 briquets on bottom, 8 on top, (350 degree oven)

Throw the chopped up bacon slice in the bottom with about a 1/4 cup of olive oil.
When the bacon starts to sizzle, the DO is hot enough to begin.

Brown the chicken pieces, particularly light meat, on both sides, (just a minute or two)

Dump in the bell pepper, pineapple, BBQ sauce, and cola, stir it up good with a wooden spoon.

Put the lid on it and let her cook for 45 minutes. if you have 8 pieces and or it is bone in, cook it for about and hour.

Our critque (war dept and myself),
The meal was good, should have put in more bell peppers, (damn they tasted good). There are better BBQ sauces than the Jack Daniels brand I used. Actually, my wife made better sauce on a camping trip one time, out of stuff she found in our and our friends coolers.
The chicken was cooked too long, starting to get dry. I actually cooked it more than I intended, about an hour and 5 minutes, I got side tracked microwaving the frozen corn so 45 min would have been about right.
That being said, I'm spooked about under cooked chicken.

Did you cook it in the oven, on top of the stove, over a campfire????

I guess I should have included a photo of that also, because I wrote it incorrectly in this post.:oops:

I used 8 briquets in a ring underneath and 17 briquets in a checkerboard on the lid. Currently I place a piece of steel over our outdoor BBQ grill and I cook on that.

I'm in the process of converting our old grill into a DO/Briquet platform.
