8 slices bacon, cut into 1/2" pieces
1 T. finely chopped fresh garlic
1/4 cup crumbled blue cheese
1 pkg. (3 oz) cream cheese, softened
3/4 cup milk
1 medium red onion, sliced 1/8" thick
1/2 t. pepper
1 1/2 pounds (1 inch thick) beef top round steak
1/4 cup chopped fresh parsley
Heat oven to 350. In large skillet, cook bacon and garlic over medium high heat, stirring occasionally, until bacon is browned (8 to 10 minutes).
Drain off fat except for 2 T.
Reduce heat to medium; stir in blue cheese and cream cheese.
Cook, stirring constantly, until cheeses are melted, 2 to 3 minutes.
Gradually stir in milk. Continue cooking, stirring occasionally, until sauce just comes to a boil, about 3 to 5 minutes. Stir in onion and pepper.
In 13 x 9" baking pan, place steak; pour sauce over steak.
Bake for 40-45 minutes or until desired doneness. Sprinkle with parsley. Let stand 10 minutes. Slice steak thinly on the diagonal.
