Lee, I've been doing wings pretty close to your method. <Great minds/chefs think alike>. I place flour + seasoning usually just Old bay in a bag, add wings shake and place in a jelly roll pan to bake about 25 minutes/side. Then I place in a large bowl and toss in sauce de jour. When the boys were at home I had to fix a minimum of 5#!

I seasoned the flour Lee but next time I'm going to try it as you said by putting it directly on, I agree I always feel it is wastful to season the flour....but I usually do it anyways! lol

wow, very nice, qsis. kudos to your mom.

i just bought a bunch of chicken at bj's. some is scheduled to be made as keltin's dorito chicken, but i think the rest will be baked alla mama di lee. thanks,

btw, what do you do with the leftover garlic? on bread, or into mashed spuds?

BT, I just serve the roasted garlic on the dinner plate. We just pick up a clove with our fingers and squeeze it right into our mouths.

Karen, I did these at 375 for an hour and 15 minutes, since they were big and JUST thawed.

An hour might be fine for smaller pieces.

Saliha, Pam is the brand name of a cooking spray.

You can use butter or oil on the bottom tray - anything so that the chicken won't stick.

I loved the corn flake recipe from the 60's and will have to do it soon. I'm lucky as I'm the only one that likes wings (and liver and gizzards) so get them all.

That's what I use also! To make sure that the corn flake crumbs stick to the chicken pieces, use a beaten egg in with the seasonings, which is also nice.

I usually buy whole wings, but I truly prefer the 'wingette' part of the wing (as opposed to the 'drumette').

Discovered that my Asian supermarket sells packages of ONLY wingettes!
