Salmon Picatta Special at work

We were originally going to do a Tilapia Picatta, but I guess the Tilapia never showed up.

6 oz salmon, pan-seared, finished in the broiler, then use the same skillet to make the Picatta sauce, with shallots, capers, a little white wine, a squeeze of fresh lemon juice, and whole butter to mount the sauce.

Served with Wild Rice and sauteed veg med.

I just had some crackers and cheese because of that picture and cranberry juice to wash it all down.
