Hopefully, corned beef and cabbage.

The nerd that went grocery shopping (me) bought corned beef and potatoes, realized he had carrot and forgot the cabbage and beer..

Fear not!!!!! Right after typing this he is going to take Morgan and we are going on a beer run. Oh yeah! and a cabbage too.

I've been craving corned beef and cabbage but was to expensive when I looked yesterday.

Dinner will be fish sticks and tater tots.

I have been craving that corned beef over a week.

If I am able tomorrow, I'm going for braised short ribs of beef. Statistically, I won't get to do it. I'm hoping.

The leftovers would finish off the week.

Tonight will probably be bread Pork cutlets, Krorr's herb and butter pasta side and peas.

I may make some meatballs and sauce for tomorrow dinner and some for freezer.

Spaghetti and meatballs are on for tomorrow night. I only get meat with sauce when my son isn't here unless I do some on the side.

Tonight is leftover leek potato soup that was blended per the recipe. I'll have a smoked turkey sandwhich on the side.

Gretchen has her annual vet appointment today, so I'll stop at the BP C-store Subway for a sandwich combo since it's on the drive back.

I made 32 small meatballs (used a disher to make it easy), convection roast 425F 10 minutes and nicely browned. Sauce is simmering with all the meatball fond, fresh basil, oregano, onion, garlic, EVOO, burgundy wine. When meatballs are cooled they will be divided up for freezer with sauce. Tonight's meatballs will simmer in the sauce while the cheese ravioli (Star brand) cook. Topped with fresh grated pecorino Romano cheese and a side salad.

I made a test meatball burger and the seasoning was perfect. Hub can't wait for dinner. Wish I had some bread for garlic bread.

Tonight was the leftover wine braised beef shanks made into a shepard's pie. It's one of those dishes that taste better the next day.

Breaded thin cut boneless pork chop, mashed potatoes, pork gravy and steamed baby spinach will be dinner tonight.

We get our poultry at a local poultry farm. I asked for ten thighs, with skin, bone on. When I got home I had ten thighs no skin and boned. Didn't know quite what to do with them. Chicken and dumplings went through my mind. Here is my version.


Chicken:
4 or five thighs no skin or bone, cut into small cubes.
3 ribs celery, chopped
1/2 large onion, chopped
1/2 bag frozen peas
3 carrots cut up
2 (10 3/4-ounce) can condensed cream of mushroom soup.
1 Qt Chicken stock
1 Qt water
1 Envelope Chicked bullion
Season to taste salt, pepper, garlic powder.

Put it all in a pot that has enough room for dumplings and simmer 40 minuts.

Dumplings

1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon white sugar
1/2 teaspoon salt
1 tablespoon buttter
generous pinch dried basil
1/2 cup milk

Combine all dry ingredients.
Using a pastry cutter cut in the butter.
Add the half cup of milk

Stir till everything is combined.

Bring the chicken mix to a medium boil.
Using a tablespoon, form as many about 1 1/4" balls of batter as you can.
Drop in the chicken mix and cover.
Let cook fifteen minutes.

No cooking dinner this evening.
Some friends and I hit Texas Roadhouse.
I thoroughly enjoyed the smothered chicken, seasoned rice (meh.. good, but not wonderful) and a side of their green beans.
