Tinned Potato

A few years ago I went to Pierre, South Dakota pheasant hunting. A few blocks from my hotel was a saloon and steak house called Mad Mary's. The steaks were outstanding and the side they offered was a baked potato called a Tinned Potato. It was a baker wrapped with foil. On the bottom of the potato was bacon, then topped with onion slices. I've been doing them at home ever since.

You do those in the oven or on the grill, Johnny?

Today's tinned potato; they do all start to look alike.
This one was excellent and probably because i've not
had one for so long.

looks like a tasty-tasty twist on an old standby. I'd be tempted to shallow slice the top of the potato, layer the bacon & onion on top of that.... my "standard" baked potato is in foil in the oven at 425'F.

right now we're digging-same day-eating Red Pontiac's out of the garden. a fresh dug potato is a thing of joy in the spud world.
