I wish I could send you some! A pork butt yields lots of meat, so I've got to get my thinking cap on to come up with some other ways to use it.....maybe some redbeans and rice.

Grilled up some locally-made sweet Italian sausages the other night.

We had two of them along with grilled vidalias and red peppers, in sub rolls. The other two will be in a dish later this week.

Cooksie, thanks for sharing your photos and text re: your experience smoking pork butt!

You did just what thousands of others of barbecuers do, when things don't go exactly as planned - you try something else, a plan B, and a plan C, if necessary. And you wait.

GREAT JOB!!

11 hours does not sound out of the ordinary, depending on where your cooker temp was.

I'm definitely going to be trying that meatloaf...that looks awesome. Good looking Brats too, Lee! Here's some boneless, skinless chicken breast that I marinated in Italian Dressing and grilled. I cooked the california veggies in a tin foil packet as well as the frozen mini ears of corn and the Sister Shuberts rolls.

Be who you are and say what you feel, because those who mind don't matter and those who matter don't mind.

Never explain yourself. Your friends don't need it and your enemies won't believe it anyway.

Thanks Cooksie...the best part about it was no dirty pots and pans and I didn't have to clean up the kitchen!

Cooksie has found out something I've known for years:

Pulled pork makes excellent filling for Tex-Mex food! Fajitas, tacos, enchiladas, my version of Posole, etc. Try a fajita with the pulled pork, "fiesta cheese blend" from Wally World, some homemade salsa verde, and queso fresco.

Went to stay with some friends on a lake yesterday. We made good use of their WSM on the porch to smoke some ABT's, chourico, and ribs.

We ate outside, overlooking the lake and then watched the fireworks. Great day!

Oh, I forgot to post these pictures of grilled baby carrots (tossed with melted butter, balsamic vinegar, parsley, s and p) and Portobello Pizzas.

The Portobello caps are de-gilled, oiled and grilled. Then filled with cooked, crumbled Italian sausage, grape tomato halves, chopped basil, shallots, topped with shredded mozzarella and broiled until the cheese melts.
