Peep's Sausage and Peppers

Peep's Sausage and Peppers

1 1/2 - 2 lb Italian sausage (sweet or a combo of sweet and hot your choice)
10 cubanelle peppers (or 6 green bell peppers)
3 red bell peppers
1 yellow bell pepper
3 medium yellow onions
6 - 8 garlic cloves - cut into thin slices
Olive oil - enough to coat pan (2 or 3 turns)
Ground Hot red pepper flakes - to taste
Salt - to taste
Ground black pepper - to taste
1 (15 oz. can) tomato sauce
1/2 a 15 oz. can of burgundy wine (use empty tomato sauce can to measure wine)

Poke holes in the sausage and place in pan.
Cover sausage with water and bring to boil.
Lower heat and simmer till all water is gone, turning sausage and poking occasionally to let grease out.
When water is gone fry till sausage is nice and brown.
Remove sausage when fully cooked, cut into bit sized pieces.
Wash and deseed all peppers.
Slice peppers into medium strips.
Slice onions into medium slices.
Pour out sausage grease.
Add olive oil to pan with the brown bits.
Heat till oil ripples then add garlic.
Sauté just till fragrant.
Add peppers and onions to pan and turn till coated with oil.
Season with salt, black pepper and hot pepper to taste.
Raise heat and fry till just tender.
Add sausage, tomato sauce and wine, bring to boil (to burn off alcohol) for 1 minute.
Lower heat. Place cover on pan and simmer 5 minutes.

lol, I was wondering, too.
I'm thinking, she buys her wine in a can, or why not just say about a cup of wine, what does she mean? :yum:

hmmmmmmmmmmmmmmmmm it was so clear to me!! LOL maybe i should ask someone to edit it? to read:

Yeah.... but then we would get into that whole copyright issue again... is she changing the method is she changing the artistic expression....
Oh wait, it's your recipe. You can do whatever you want.

8 ounces is one cup, so I would write: 1 Cup or Just under 1 Cup Burgundy wine. Like my Mom says: "It's a guy/girl thing."

or just measure the way a home cook does!! we pour the liquid into the tomato can so as to get all the good stuff out!!
