Apple Fluden
Based on a recipe from "The Great Hadassah Cookbook," compiled by Members of Edmonton Hadassh-Wizo

Serves: 12-15

Dough:
4 eggs
1 cup sugar
1 cup oil
1 teaspoon vanilla
Pinch of salt
2 teaspoon baking powder
4 cups all purpose flour

Apple Filling:
8 apples, grated
1 cup sugar
1/8 teaspoon ginger
Pinch of salt
1/4 teaspoon cinnamon
1 tablespoon lemon juice
2 tablespoons bread crumbs

1-1/2 T sweet butter
1/4 ground walnuts or pecans
cinnamon and sugar

Directions:
In a large mixing bowl, beat the eggs well and then, beat in the sugar. Mix in the oil, vanilla, salt, baking powder and flour. Divide the dough in half and roll it out. Line a greased 9-inch square pan with half of the rolled out dough.

Drain the apples and combine them with the sugar, ginger, salt, cinnamon, lemon juice and bread crumbs. Spread The apple mixture over the dough in the pan and dot with butter. Roll out the the remaining dough and cover the filling. Sprinkle cinnamon and nuts over top layer of dough before baking. Mark in squares. Bake the apple fluden at 350°F for 1 hour. Cut into squares when cool.
