Andy Goodwin's Marinara
Andy use to be a caterer and was like a big brother to me. This is his marinara recipe. May he rest in peace.

Ingredients:
1 Tablespoon sweet butter
2 Tablespoons extra virgin olive oil
2 garlic cloves, minced
3/4 teaspoon anchovy paste
2 Tablespoons tomato paste
2 28oz. cans Italian Tomatoes in Puree (San Marzano tomatoes )
2 Tablespoons fresh parsley
2 Tablespoons fresh oregano
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1 cup water

Directions:
In a saucepan, soften garlic in butter and olive oil for about 2 minutes. Add the anchovy paste and stir for about 1 minute. Add tomato paste and stir for about 2 minutes. Add water and cans of tomatoes with puree. Add parsley and oregano. Simmer partly covered for about 25 minutes. Add salt and pepper.
