MEMBER SPOTLIGHT - RICKISMOM!!! Tell us a little about yourself - your family or household, kids, pets, occupation, etc. - Oh my, let see....I've been married for 23 yrs, have 2 girls, Shellie 18 & Shannon 21. We have 4 chihuahua's (Little Ricki, Baby (he has 3 legs), Gus and Mr. Binks), 2 cats (Milo and Mama Kitty) and 2 parakeets who have no names, lol (can you tell that I love animals? lol). I've worked in the medical field for 26 yrs from hospitals to clinics. I have my degree in Early Childhood Education but was unable to find a job after graduation so I got at the local hospital and the rest his history.

What part of the world do you live in? - I live in the LOVELY Northwest corner of the country in the state of Washington...the OTHER Washington, lol

How did you find the NCT community? - Funny you should ask that. I was at another forum that I had just found by chance and met Lilylove. When we both got frustrated with the other site, she suggested this one and here I am!

Do you have any hobbies besides cooking? - I love to make candles and I've done some writing and editing of books in the past as a side hobby.

If you could choose any profession or occupation, what would it be and why? - Wow, this is really hard! I've always had a fantasy to open up my own family restaurant but it's just not feasable or reasonable for me right now so I just keep dreaming, lol

How and why did you choose your Username? What does it mean? - Little Ricki is my first chihuahua I've ever owned. I've always wanted one ever since I was a little girl. In 2001, my family and I were on vacation and spent a few days in Las Vegas. We were staying at the Luxor and in the evening we would lock the girls in the hotel room with a movie and then we'd go down to the casino and gamble for an hour. My father had always had luck at Keno so I decided to give it a try. I played about 4 games, picking 5 numbers each time but nothing happened. I was down to my last dollar and my husband decided to sit that game out. I felt a compulsion to pick 5 more numbers, no reason to it, it just came in my head. I placed my $1 bet and won $800! LOL! My husband was screaming "Yeah baby! Yeah!!" and I was in shock! So when we got home, I set aside 1/4th of the money, did some research and in 2002 found a breeder who just had a new litter of puppies. I went out the following weekend and picked him out and brought him home 8 weeks later. He's now my 8yr old boy that I never had :)

What is a typical day like for you? - I'm up by 5am, taking care of the "boys" and out the door for work by 7am. I'm lucky enough at this new job that I started yesterday, I'm just 5miles from work so I can come home and let the dogs out, lol. Then I come home after work, have a glass or two of red wine, make dinner and then it's off to bed. Exciting huh? lol

What accomplishment are you most proud of? - I'm really proud that I've worked my way up in the medical field by nothing but on-the-job training, how far I went musically from high school to my early 20's singing in select groups and chorales. I was even chosen to represent the state of WA in a choir that toured all over Europe and played 2 concerts at Carnegie Hall and how much I've learned in the kitchen by watching tv and from you guys here on NCT!

Give us 5 words that describe you. - short, funny, loving, trustworthy and kind.

Name 5 things that would be on your "bucket list". - Hmmmm. I don't know about 5 things but...1. I literally RAN INTO Warren Beatty when I was in NY in 1979 walking down the street. I turned the corner and *SLAM*! right into him. He asked me if I was alright and I looked at him (then I stupidly said...) "OMG, do you know who you are???!!!"
2. I got stopped by the Secret Service in WA DC when I walked through the back gates (hey, they were open!) trying to find a short cut to the other side, lol. I sweet talked my way out of that one, believe me, lol

Name 5 things you can't live without. - my friends, animals, family, curling iron (I have extremely flat, straight hair, ugh!) and my favorite skillet.

Who is your role model and why? - I can't really say I have just one. Julia Child really influenced me when I was 10 to start cooking and I'm finding that my Dad really left me a lot of wisdom that I wish I could thank him for but alas, he passed away in 2007.

Tell us one thing about yourself that people would be surprised to know. - That I'm a singer and have made 5 records.

What would the child you once were think of the adult you have become? - I think that kid would think I'm pretty cool, lol at least that's what my kids friends say about me, lol.

What is the best moment of your life so far? - When my children were born and meeting Keith Urban at a gas station in Nashville!

How and at what age did you start cooking? I'd say between 8-10 yrs old

Do you have a signature dish or one that you make especially well? - Lasagne, everyone wants my lasagne. I got the recipe from an elderly woman in Italy when I was touring with the group and our bus broke down. She took us into her home and I watched her make it. I'll never forget it...

What is your favorite spice? - GARLIC and Italian seasoning

What 2 cooking tools/gadgets/appliances would you swap from your kitchen and what would you swap them for? - I want to trade my knife set for knives that are sharp!

What is your favorite restaurant meal? - A reuben sandwich from the Noshville Deli in Nashville, TN. Served with french fries and the best darn fresh made dill pickle you've ever had!

What would your last meal be if you could choose anything at all? - No doubt, mashed potatoes smothered in country gravy!

If you could host a dinner party with 6 well-known guests, living or dead, who would they be and what would you serve? - Keith Urban, Michael Buble, Jesus, John the Baptist and Luciano Pavarotti. What the heck, I'd serve them my famous lasagne! lol

Who would you most like to prepare a meal for and why. What would you serve? - I'd like to serve my Dad the fried chicken, mashed potatoes and gravy dinner he asked me to make before he passed away and was too sick to eat it.

Who would you most like to have prepare a meal for you? - That's a toss up between Rick Bayless and John Besh.

100 years from now, how would you like to be remembered? - I'd like to be remembered as a good-hearted, likeable person :)

I'm very impressed with the 5 records ...and that from where you live you sound like you've spent your share of time in Nashville. That sandwich sounds scrumptious! :thumb:

And lastly, your famous lasauga recipe ...is that something you will ever share here with us on NCT?

Sorry Keltin but alas those recordings were made on vinyl in the late 70's and early 80's. :blush: I have no copies left but that was very flattering, thank you!
