I saw a photo of Joe's sandwich bread on Facebook and asked him for his recipe. He emailed me a PDF, which is attached below my last photo.
Joe is very helpful with tips, photos, and Youtube videos. He told me how he cuts his loaves (electric knife) and how he bags the sliced bread for the freezer (he orders bread bags with twist ties). He takes the slices he needs and nukes them for about 10 seconds. Perfect! That's what I'm doing, too!
I'm still a neophyte with this, and have not mastered dealing with sticky dough yet, thus the uneven vs. smooth top to my loaves.
The bread is great - toasted and untoasted. Learning how to do this is fun, when you have all the time in the world, and when you feel good!
