Cooksie has found out something I've known for years:

Pulled pork makes excellent filling for Tex-Mex food! Fajitas, tacos, enchiladas, my version of Posole, etc. Try a fajita with the pulled pork, "fiesta cheese blend" from Wally World, some homemade salsa verde, and queso fresco.

Went to stay with some friends on a lake yesterday. We made good use of their WSM on the porch to smoke some ABT's, chourico, and ribs.

We ate outside, overlooking the lake and then watched the fireworks. Great day!

Oh, I forgot to post these pictures of grilled baby carrots (tossed with melted butter, balsamic vinegar, parsley, s and p) and Portobello Pizzas.

The Portobello caps are de-gilled, oiled and grilled. Then filled with cooked, crumbled Italian sausage, grape tomato halves, chopped basil, shallots, topped with shredded mozzarella and broiled until the cheese melts.

Yowza, Q-Sis! Love it all :clap:. That's what I want my ribs to look like....maybe one of these days :D.
