Crab-Stuffed Mushrooms
2 c. crab meat
2 TBL bread crumbs
2 TBL onion, minced
2 TBL parmesan cheese, grated
1 1/2 tsp salt
3 TBL parsley, minced
24 mushrooms, stems removed, reserved
1egg, beaten
Sriracha Chili Sauce, to taste
Chop the mushroom stems.
In a bowl, combine first six ingredients and the chopped mushroom stems. Add beaten egg and hot sauce.
(If mixture seems too dry, beat another egg and add as much as it takes to achieve the desired consistancy)
Stuff mixture into the mushroom caps.
Bake at 300 degrees until tender, 15 to 30 minutes. Serve hot.
