Forget to say. Use oil once for frying, second time the smoking point is lower and antioxidant and antiradicals are gone, and there are radicals now.

An interesting tip. If you add a little of butter (or lard because is neutral in taste) to olive oil for frying, you protect olive oil and its taste. It's like distillation process, the lowest boiling point has to evaporate all before the highest starts.

What surprised me was clarified butter (ghee) had such a high smoke point. I now make my own using unsalted butter about 2 lbs at time. It lasts a good year too so it does keep. The process takes about 30 minutes which I've posted on this site.

I wonder what avocado oil tastes like? Amazon has it for $10.95 for 8.5 ounces or $99 for 5 liters.

That I wouldn't know but if anything like avocado I wouldn't care for it. That is a fruit I never could acquire a taste for and I've sure tried. My wife flat love the fruit though.

I'd like to try it, Fryboy. I wonder if it would have a nice flavor (like olive oil) for dipping or dressing salads.
