Atomic Buffalo Turds

jalapenoes, as many as you like
little smokies, half as many as the jalpenoes
softened cream cheese, i like the one with chives
bacon, half a slice for each one
cheese if you want it ..


take your jalapenoes and slice in half length way.
scrape out seeds and devien
i like to add some thin sliced cheese to the
bottom of the jalapenoes
put softened cream cheese in each half.
place a little smokie on top of cream cheese
wrap or lay bacon on top ..
sprinkle with your favorite BBQ rub ..
2 hours at 225 on the smoker until the pepper
is roasted and bacon crispy .
this can also been done in the oven or on
the grill ..

How much of the pepper heat does the smoking remove? :shock: I might need that Bud Lite in the pix and a half a dozen more. Looks good though. :wink:

i do not think that smoking removes any heat ...
maybe the roasting does .. and the removal of the seeds and
viens .. they really are not spicy ..

They really aren't hot at all. Well, not entirely. There is a little heat. When the peppers are soft most of the heat is gone. Leave some of the white flesh if you want them to be hotter.

The only difference between how I do these and Love2Q is that I don't cut off the ends. I leave the stem and all. Makes a great little handle and after enough time on the grill it's edible.

Oh, and if you are afraid of the heat from the jalepenos use little red peppers like the ones in this pic:

I've come across packages of little bell peppers of all different colors that are about the size of those reds that work pretty well also.

I don't think I've ever seen them done in halves before. It would definitely make making them easier. I had five for lunch yesterday, left over from Sunday. Love 'em. Just the right amount of heat. Like eating candy. I get my extra cheese from cheddar filled Lil Smokies.

i cook them in halves as well.. they seem to cook a little quicker and the pepper gets softer faster..

Yeah, I saw that the other night (was it?).
I just think they look neat all wrapped up. Like a real turd :ohmy:.
I cut off the stem cap and make a slit. And they are a real PITA to make :wink: but oh so good (lol). I've gotten a lot quicker, which helps. I start the bacon at the cut end and wrap around it so the lil sausage doesn't come peeking out when he heats up....:unsure: Wait a minute. That didn't sound right. :lol:

chow .. i used to make them whole but the wifey likes
them in half and they are really a lot easier to make ..
and the quasi .. something i grabbed one day that was lyinh around
and started putting it in pics .. kind of a proof shot ..

My wife doesn't like the bacon, so I've use large pepperoni, ham, proscuitto and even bologna to wrap them.
And smoked oysters instead of little smokies, with slices of smoked salmon at the bottom.
Wrap them inside ground meat and you have an Armadillo Ball, at least that's my version. :)

Had some of these the Saturday before Easter at my Daughters and SIL's. Mmmm so good. Wish I had taken pics but they were going fast, if I didn't eat I would not have gotten my fair share.
