1 pkg philo dough cut into circles
100 ml cold water for sealing
150 ml sunflower oil (for frying)
Filling:
5 1/4oz white cheese crumbled or feta or cottage cheese
1 tablespoon parmesan grated
1 egg
Salt(if wanted)
2 TBL parsley, chopped
2 TBL dill, chopped

Put cheeses, egg, salt, parsley and dill in a bowl, mix with a fork to form a smooth paste.

Pile Circular shaped philo dough on top of each other and cut with a sharp knife down the center to form four semi circles. Double up the semicircles and cut the four layers in to two again. Repeat this once more ending with 16 elongated triangular pieces of pastry.

Place one tea spoon of cheese filling across the base of each triangle. Tuck in 1/2 inch(1cm) of pastry on both sides over the filling, roll up tightly like a cigar. Damp the end with water for sealing.

Put oil in a big pan and heat. Place rolls in hot oil and fry them until they take a light golden color and become crispy. Don't leave the stove as they fry quickly :) Place ones that are done on a paper towel to soak up extra oil.

They look good....and easy, but what the heck is "white cheese" and is this the best cheese to use?

the original recipe called for a turkish cheese... let me google the cheese again..lol

Beyaz peynir(literally, "white cheese"). It's a goat's cheese, similar to feta, but much sharper and very dense.
