Lemon Basil Tortellini

1 bag of Three Cheese Tortellini
3 or 4 fresh basil leaves, chopped or if you want to get fancy, cut into chiffonade
1-2 cups frozen peas
2 tbsp extra virgin olive oil
the juice of 1 lemon
salt and pepper to taste

Follow the cooking instructions on the bag of tortellini for starters.

While the tortellini is cooking, cut up your basil. To make basil chiffonade, stack the leaves onto one another, roll them up and slice so that the leaves turn into little ribbons.

Juice your lemon and measure out your peas.

About 1 minute before the tortellini have finished cooking, add the frozen peas.

When the tortellini have finished cooking and the peas are heated all the way through, drain and return back to sauce pan. Drizzle with olive oil, add the lemon juice, salt and pepper and right before serving toss with the fresh basil.
