Shrimp Etouffee

Ingredients:

1 1/4 stick butter or margarine
1 medium onion - diced
2 stalks celery - diced
1 small bell pepper - diced
1 (or more) cloves garlic - minced
1 lb. peeled shrimp
1/2 tsp. salt
1/2 tsp. cayenne pepper - optional
Cajun seasoning to taste

Directions:

Melt butter or margarine. Add diced onions, celery, garlic, and bell pepper. Saute' on medium heat until vegetables are translucent approximately 15 minutes.

Add shrimp and Cajun Seasoning - stir well. Cook covered on low heat for approximately 15 minutes, stirring occasionally.

Turn off fire, and let sit, covered for 15 minutes. This is to let the shrimp soak up all the good seasonings!

You may add chopped parsley or green onions just before serving. I serve it over white rice.
