Haddock with Mango Salsa

I cooked a couple haddock filets in the sous vide, and served them with a mango -lime - coconut salsa. Wow! The flavors popped! I think the salsa would also be great over grilled chicken.

Mango Salsa

1 mango - diced
diced red pepper
handful of cilantro - coarsely chopped
tablespoon of coconut
1/4 to 1/2 fresh squeezed lime juice
salt & pepper

That looks delicious, Moxie! I've done the mango/avocado salsa over chicken, and it is very good with chicken.

I would have never thought to add coconut, but that sounds good to me.

Loved it, Lee. It came out perfectly flaky yet still very moist.

I cook nearly all my seafood in the Sous Vide oven these days. It's the best method I've ever seen. For most fish I'm using a setting of 135-140F. 30 minutes or less on most filets is perfect. Lobster needs 140F. Salmon we prefer at 120F so it's still rosy - I never poach it anymore.
