DW concocted this whilst I was recovering from knee surgery. She used Tilamook extra sharp cheddar which is aged 24 months and the brick is hard enough you could pound a nail with it. Placed atop a good whole wheat bread. Once it was toasted on both sides she split the sammy and placed a thick slice of heirloom tomato from my garden. Kinda messy but oh so good!

This sounds excellent, Green Jeans! My mom loves Tilamook, which I try to make sure she is always stocked up on, and she loves tomatoes. Whenever we are there visiting, it's hard to find things to make for her that we will also like - I think this will be a winner! Thank you.

We love cheese and tomato sandwiches. I'll have to pick up some of that cheese. I don't think I've ever had it. I might make it on my honey wheat bread I just baked.

Sounds really good!
