Exclamation Cobb Salad!

For two salad platters:

Bed of lettuce
1 1/2 chicken breasts, grilled
2 hard boiled eggs
6 green onions
3-4 slices cooked bacon
8 cherry tomatoes
2 handfulls of any kind of cheese you have
a dozen or so black olives
half an avocado

Cut the stuff in bite-sized pieces and arrange the items in stripes on the bed of lettuce

Drizzle with your favorite dressing.

(Mine is going to have chunky bleu cheese dressing)

I would add ham strips and use both cheddar and provolone cheese.

Jalapeno Ranch dressing, you can keep the molded stuff. Funny thing, most places throw away something that is molded.

I always keep molded cheese on hand. I love gorgonzola because of its stronger flavor. Crumbled blue cheese on any dressing rocks
It's good in chicken wing sauce, too.

Such a great summer dinner!

This time I had leftover Chile Lime Chicken (LuckyTrim's recipe), bleu cheese, and some of my tomatoes.

Wonderful!

Made a couple of these last night with turkey breast meat that I had injected with Creole Butter injection marinade and smoked. Also had some cherry-smoked bacon to add to the platter.

These salads are always a hit in the summer.

Wanted to make sure I squeezed in a Cobb before the summer ended.
