When I first started going to the Bahamas, almost 30 years ago, I loved the Paradise Island Resort and Casino which was then owned by Merv Griffin (the nice little resort has since morphed into the monsterous Atlantis).
It was all-inclusive, but the three or four restaurants at the resort were top-shelf!
One of the things that my mother and I raved about was what they called the Bahamian salad.
It was a bed of Bibb lettuce, topped with avocado, hearts of palm, red onion and maybe artichokes. With a thin white dressing.
I like to substitute grape tomatoes for the artichokes, and use whatever greens and dressing I have available. But the constants are avocado, hearts of palm and red onion.
So delicious!
