Battered Pickles

salad oil
1 egg, slightly beaten
3 tablespoons milk
1 tablespoon pickle liquid (dill or sweet)
1/3 cup pancake mix
1 cup pickle slices (Cucumber Slices, Sweet Pickle Chips or Hamburger Dill
Pickles)

Heat one inch of salad oil in skillet or electric skillet to 360
degrees f. on deep fat thermometer. Combine milk, egg, and pickle
liquid. Add pancake mix, stir until smooth. Dip pickle slices into
batter. . Fry slices in oil until lightly browned. Remove with
slotted spoon and drain on paper towels. Serve hot as appetizer
or snack.

I had these in North Carolina at a BBQ joint. They were really interesting, and good with some Ranch dip. The ones I had were dill slices, really thin, and had a very light batter on them.

Hey! I LOVE fried pickles and I'm always in search of a new place that serves them in the Boston area! Precious few places, lemme tell ya!

I missed this recipe first time around. Copied and saved to try!

Might add a little Frank's hot sauce, too!
