I was away for Halloween this year, so didn't carve a pumpkin. I miss the seeds!
So, as I was prepping my Carnival squash last night, I decided to try roasting it's seeds. Not bad!

Roasted Squash Seeds
Place the seeds and strings in a colander and run warm water over them. Separate the strings from the seeds and discard the strings.
Place seeds on a small toaster oven pan that has been foiled and Pam'd. Lightly salt the seeds.
Roast seeds in a 200 degree toaster oven for an hour or so, stirring every 15 minutes.
