Lemon/Dill Panko Crusted Salmon

Lemon/Dill Panko Crusted Fish

1 cup of Panko bread crumbs
1 1/2 tsp of fresh or dried chopped dill
1 tsp granulated garlic
3 Tbsp crushed french fried onion rings
1/2 tsp grated lemon zest
Salt & pepper to taste
2-3 Tbsp olive oil

Mix all ingredients together & top of your fish - (I use on salmon or cod)
Bake at 425 for 15-17 minutes

RM, reading the ingredients for this mixture is making my mouth water! And cod filets are on sale this week!!

I make something similar to this using Cod or Haddock, nixing the lemon zest & the french-fried onion rings.

I just squeeze the juice from half a lemon over the fish, sprinkle with Panko crumbs, chopped fresh dill (don't like the taste of dried dill, & these days fresh dill is available in most supermarkets), some lemon-pepper seasoning, & finish with very thin slices of lemon & a dotting of unsalted butter. Bake for about 20-25 minutes (depending on fish thickness) @ 350 degrees & garnish with more fresh dill before serving. Delicious!

This works well with Salmon as well, but for some reason I prefer not to use the breadcrumbs on Salmon - I always prefer Salmon unbreaded.

i have also made fresh salmon crusted with crushed up dill pickle potato chips...dont knock it..lol
