Balsamic Pot Roast

Balsamic Pot Roast

2-3 lb pot roast
2 Tbsp olive oil
4 garlic cloves, sliced - divided
2 onions, sliced in big chunks
2 tsp crushed dried rosemary - divided
1/4 c beef broth
1/4 c balsamic vinegar
salt/pepper

Slice 2 garlic cloves & insert them into the roast, cover with salt & pepper on both sides & brown on all sides in a 12 inch skillet with olive oil then remove. Place the remaining incredients in the bottom of the slow cooker, place meat on top of the vegetables & add the remaining rosemary on the meat. Cook on low heat for 6+ hours. Easy-peasy! :wink:

I have made this, in fact tonight lol. We've been without power for a few days so it sure felt good to have a hot meal!
No, the balsamic compliments the richness of the meat making it tender and carmelizes it to yummy goodness! :in_love:
