Rose Jam

150-200 gr scented rose petals
1 lemon
2 cups water
4 cups sugar
2-3 tbsp rose water ( optional )

Wash and discard bitter yellow base of the rose petals. Place them in a bowl with 2 cups of sugar and let it stand overnite.
Next day boil the remaining 2 cups of sugar with 4 cups of water for 10 minutes. Then add the rose petals, lemon juice and the rose water.Simmer for further 10-15 minutes or until jam termometer indicates 105- 106 C.
PS : You can also keep the jam for 1 or 2 days under the sun to thicken.

dw just dead headed the roses, so i'm hoping for a good late summer bloom. i may try to make this.

Hi buckytom, I have been picking the petals and froze them, to make it 200 gram. It is not easy LOL! Then when you have enough you can start making the jam.
