This came out good but wouldn't say it's as good as sex on a plate.

The Cajun rub was:

1 tsp salt
1 tsp fresh ground black pepper
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
1 tsp oregano
1 tsp paprika
1 tsp thyme I ground up the organ and thyme with a pestle for a bit.

I picked up a meaty piece of side pork today and will give this a try again. I'll be able to slice it myself and a bit thicker than what I'd bought previously.

This dish was one I learned from my grandmother so many years ago only she use regular pork chops. I got these Hormel pork tenderloins at WinCo and they were perfect.

I fried off the pork with a little bacon grease, added the potatoes, onions, a little water, salt and pepper, then baked covered at 300 degrees F for about an hour and a half. I used the new, to me, #8 Wagner dutch oven I'd recently got at a garage sale.
