Fried Crawfish Tails

1-2 lbs Crawfish tails, peeled and deveined
1 1/2 cups Flour
2 lg Eggs
1 pinch of Salt
12 oz Beer, i like to use newcastle brown ale or guiness
1/2 tsp cayenne pepper ( i use dried habanero)
S&P to taste​
Oil (for frying)

sauce
2 lg Egg yolks
juice of half lemon or lime
1/4 tsp dry mustard
1/2 tsp Worcestershire Sauce
1/4 tsp hot sauce
3/4 c Oil
1 tb Water, hot
2 tsp Chives, minced
1 tbl Ketchup
1/4 tsp cayenne pepper( i use dried habanero powder)
S&P to taste​

mix the cup of flour, eggs, salt and cayenne until smooth and slowly add
beer to make the batter the consistency of pancake batter. Drain
tails and roll in remaining flour. Shake off excess and dip in​
batter. Fry in hot oil until golden.

Beat the yolks with lemon juice, mustard, Worcestershire and
Tabasco. Slowly drizzle in oil to form mayonnaise base. Add hot
water to stabilize the sauce. Fold in remaining ingredients and​
correct seasoning. Serve with hot crawfish tails.

Sounds great, sounds familiar too.. didn't we have a recent discussion on these? Something about sucking the juices outta the head? LOL.

Well you would be proud, last time around at the buffet I did suck on the heads.. still not getting the tail twist quite right but doing a better job of it!
And yes, I have to admit the juices were good! Even my 4 year old liked it!

its not all in the twist of the tail, i put the tail in mouth and force out the meat...just like when you eat an artichoke heart basically

if a crawfish is overcooked, it will always give you a hard time getting the meat out of the tail

Well, sounds like something I need to practice at.. so I better go stock up on em! Uh, just for practice sake ya know!

Haven't had them since I was a kid...and we'd catch them in the creek, sure would like some now!!

We'd catch buckets full! Ok, I'd point at them and my brothers would catch them!!

The neighbor would buy our full buckets for .25 cent and we thought we were rich. :)

Man I would have done that if I thought someone was interested... but maybe more like .50 to a buck... then we would have run off to the convenience store for pop and candy bars!!
