Roasted Canned Beets

I haven't had beets in ages and had a hankering for them.

Fresh beets are a pain, so I got two cans of whole beets. Drained, tossed them with a little olive oil and salt and put them in a foil lined pan.

Roasted at 425 for 40 minutes, turning them after 20 minutes.

Served with a little butter and a splash of red wine vinegar.

Excellent! I could have eaten them all!

I still have a large amount of beets from last Summer's CSA and should do something with them.

It's a killer to stand for long periods but the roasting looks excellent. I could do that.

Today is pickled beets day and have a huge pan in the oven roasting. Hopefully I'll have pictures later.

I ended up with 11 pints and enough for a dinner side tonight.
We also did several big batches of beet chips and they taste
pretty good. The vinegar and sea salt ones have yet to go in
the dehydrator. They should be interesting.

I never got around to making your beets, Lee.

I did make another 7 pints of beet pickle today and am done with it for the year.
