Zucchini Appetizer Squares
Makes 9 dozen
Ingredients:
4 cups thinly sliced zucchini
1 cup buttermilk baking mix
4 eggs, beaten
1/2 cup freshly grated parmesan reggiano cheese
1/2 cup vegetable oil
2 Tablespoons chopped fresh parsley
1 garlic clove, minced
1/2 teaspoon dried oregano, crumbled
1/2 teaspoon seasoned salt
1/2 teaspoon salt
freshly ground pepper
Directions:
Preheat oven to 350 degrees. Butter a 9" x 13" glass baking dish. Mix all the ingredients in a large bowl and spread into prepared dish. Bake until golden brown and a toothpick inserted in the center comes out clean, about 30 minutes. Cut into 1" squares.
