Carrot Ring

2 1/2 c mashed cooked carrots
2 tbsp onion, minced
2 tbsp melted butter
2 eggs, well beaten
1 tbsp flour
1 c cream (or milk)
salt to taste
pepper to taste
paprika to taste
Cooked Brussels Sprouts

Mix together carrots, onions and butter. Add half of milk to eggs and blend. Pour over carrot mixture. Blend remaining milk with the flour. Gently but thoroughly add milk mixture to carrot mixture.

Spoon into butter ring mold, 1 qt size. Set in pan of warm water. Bake at 350F for 40 to 50 minutes. Cool several minutes, then unmold onto serving dish.

Fill center ring with buttered cooked Brussels Sprouts. Serves 6
