Easy Spanish Rice

Easy Spanish Rice
From the kitchen of Joe Valencic​
Makes about 6 servings.​

Ingredients:

1-1/2 C Long grain rice (white or brown)
3-1/2 C Chicken stock
1 ea. 15.5 oz. Jar of mild Salsa

Directions:

Mix all ingredients in a suitable deep covered pan. Bring to a boil them simmer for 30 minutes, stirring occasionally to make sure it doesn’t stick to the bottom of the pan. After 30 minutes remove from heat and leave covered for 5-10 minutes to make sure the rice is thoroughly cooked. Serve hot.

DW wanted Spanish rice, and the recipe I found online called for diced tomatoes, diced onion, diced green pepper and a packet of Ortega taco mix. While in the store I looked at the ingredients in the salsa, and it was all there for $1.59 (store brand), so I thought I would try it because it was cheaper than all the ingredients, and it had no MSG. It tastes very much like the Spanish rice we get at one of our local restaurants that serves Tex-Mex food, so it's a keeper in my book.
