Cottage scrambled eggs

I made these, using two eggs, 1/4 cup of cottage cheese to which I had added fresh chopped chives and seasoned salt (I always mix my garden chives with cottage cheese when chives are in season).

Blended with a hand blender (Emeril calls it a "motor boat") and cooked over medium-high heat.

GREAT!

iffin' I got this right . . . using the stick blender to "puree" the cottage cheese into the egg?

sounds interesting - have you ever done the cottage cheese add without the puree bit? I kinda' like the sound of that textture.....

No, I have not tried the cottage cheese without puree-ing. I think that would be a great experiment for either of us to try, and post the results!

so I got to trying the idea of non-whipped cottage cheese.

3 large eggs
100 grams of whole milk 4% cottage cheese

nothing magic about the amount; just put the container on the scale, spooned in some cottage cheese "until it looked right"

opinion: nice for a change up, not a knock-off yer apron thing.

my personal issue: I like my eggs 'scrambled in the pan' - giving streaks of white&yolk. mixing in the cottage cheese unavoidably resulted in a more uniform yellow mix than I care for, but . . . .
