Jellied Moose Nose
Ingredients

Directions

  1. Cut the upper jaw bone of the moose just below the eyes.
  2. Place in a large kettle of scalding water and boil for 45 minutes.
  3. Remove and chill in cold water.
  4. Pull out all the hairs - these will have been loosened by the boiling and should come out easily (like plucking a duck).
  5. Wash thoroughly until no hairs remain.
  6. Place the nose in a kettle and cover with fresh water.
  7. Add onion, garlic, spices and vinegar
  8. Bring to a boil, then reduce heat and simmer until the meat is tender. Let cool overnight in the liquid.
  9. When cool, take the meat out of the broth, and remove and discard the bones and the cartilage. You will have two kinds of meat, white meat from the bulb of the nose, and thin strips of dark meat from along the bones and jowls.
  10. Slice the meat thinly and alternate layers of white and dark meat in a loaf pan.
  11. Reheat the broth to boiling, then pour the broth over the meat in the loaf pan.
  12. Let cool until jelly has set. Slice and serve cold.
Cow Udder Eclairs

Ingredients

  • 12 fresh lean cow udders
  • 1 pint whipping cream
  • 1 cup brown sugar
  • 1 (14 ounce) can artichoke hearts
  • 1/2 cup butter
  • 1 small smelt, filleted
  • 1.Soak the cow udders in Nair to remove the hair. Repeat several times if necessary until all hair is removed. Rinse in warm water.
  • 2 Place a stick of butter into a warm frying pan. Wait until all of the butter has melted, then add the cow udders. Fry them for 15-20 minutes until golden brown.
  • 3 Chop the artichoke hearts and smelt on a cutting board into fine pieces.
  • 4 In a large bowl, add the whipping cream, brown sugar and the chopped artichokes, and smelt.
  • 5 With a mixer on low, whip until creamy with a consistency like vanilla pudding.
  • 6 Remove the udders from the pan and make a long slice down the side of each udder.
  • 7 Spread the pudding mixture into each slit.
  • Serve warm or cold and have an "Udderly Wonderful" snack.
Baked Camel

  • 1 large camel
  • 2 large lamb
  • 4 large turkey
  • 20 large carp
  • 200 medium seagull eggs
  • 400 large dates
  • banana leaves, as needed
Directions

1 Cook the eggs, peel them.

2 Scale the carps.

3 Fill the carps with the dates and the eggs. Fill the turkeys with the carps.

4 Fill the sheep with the turkeys.

5 Fill the camel with the sheep.

6 Dig a large pit.

7 Place about 500 kilos of charcoal in the pit and light them.

8 Wrap the camel in the banana-leafs and place in the pit.

9 Cover with earth and bake for two days.

10 Serve with rice.




Bar-B-Qued Moose
Directions

  1. FIVE EASY STEPS:.
  2. Make sure moose is dead.
  3. Put moose on skewer or ina a very, very, very large skillet.
  4. Cook over medium-high heat until done, about 9 days, basting occasionally with all the other stuff mixed together -- 'cept the beer.
  5. Drink the beer.
  6. Serve the moose with Potatoes Anna and a asparagus souffle.
