Oatmeal Raspberry Bars

OATMEAL RASPBERRY BAR COOKIES


INGREDIENTS:

1/2 c. room temperature butter
1/2 c. light brown sugar
1 c. flour
1/2 tsp. baking soda
1/8 tsp. salt
1 c. rolled oats
3/4 c. fruit jam (only seedless raspberry jam for this recipe)



Method:

Preheat the oven to 350 degrees. Butter an 8-inch square pan, line it with aluminum foil and then butter the foil. Mix all the ingredients together except the jam. Press 2 cups of the mixture into the bottom of the prepared pan. Spread the jam to 1/4 inch within the edge. Sprinkle the remaining crumb mixture over the top and lightly press it into the jam. Bake at 35-40 minutes. Allow to cool on wire rack before cutting.

You are very welcome! We bought some of these at the church bake sale a couple weeks go, and liked them so much that I HAD to make them. When I Googled the recipe, almost every recipe site was identical, so it's a very common recipe made by many people. One variation that I will be trying is to add 3/4C of lightly toasted coconut mixed into the batter. That sounds really good. You can also replace the raspberry jam with any other flavor of seedless jam you enjoy. I think apricot would be tasty or blackberry. Yummo!
