CITRUS SCALLOPS
1 1/2 pounds Sea scallops
2 Tablespoons Lemon juice
1 Tablespoon Chopped fresh parsley
1 Grated orange rind
1/2 teaspoon Salt
1/8 teaspoon Pepper
2 Garlic cloves, minced
1 Tablespoon Olive oil
1 Tablespoon Chopped fresh parsley
Combine first 7 ingredients in a large bowl with sealable lid; seal and tumble to coat scallops well. Chill 5-7 minutes.
Place oil in a large nonstick skillet over medium-high heat.
Add scallop mixture; saute 2 minutes, flip the scallops and saute another 2 minutes or until scallops are done to your liking.
Remove to a warm serving platter and top with the parsley.
