Zippy Cherry Tomato Flounder (Microwave)
2 c. Cherry Tomatoes, cut in half (about 12 oz.) 1 (8 oz.) can tomato sauce 1/2 tsp. garlic salt 1/2 tsp. dried oregano 1/4 tsp. red pepper flakes 1/8 tsp. Sriracha chili sauce 1/2 c. Stuffed green olives, cut in half 4 (6-7 oz.) Flounder fillets Place first 6 ingredients in an 11x7x2 inch microwave-safe dish. Cover with plastic wrap and vent slightly at one corner. Microwave on HIGH for 5 minutes Uncover carefully and stir in olives. Fold fillets in half and tuck into the sauce. Cover and vent. Microwave on HIGH for 5 minutes. Stir sauce and spoon over fillets. Cover and Microwave on HIGH an additional 2 minutes.Let stand, covered for 6 minutes. Uncover and serve.
