Lobster Shiitake Gratin appetizer

Again, no set quantities. We were doing this for an app last year, and again for Valentine's Day this past weekend.

julienned shallots
julienned shiitake mushrooms
thyme, to taste
lobster claw meat (we get outs packaged, but if you have any leftover, this is a great use for it)
white wine
heavy cream
salt and pepper
parmesan cheese

Preheat a broiler. Heat a saute pan over medium-high heat. Swirl with clarified butter. Add the shallots, shiitakes, and thyme. Saute for a few minutes. Add the lobster and saute briefly. Deglaze with wine. Add enough heavy cream to that everything is moist. Bring to a boil. Season to taste with salt and pepper.
Pour the mixture into a heat-proof bowl or individual casserole dish. Sprinkle parmesan cheese over top. Place in the broiler until the cheese has melted and caramelized a bit. Remove. Serve with thick-cut, freshly-griddled croutons.
