Easy Beef Stew
2lbs stew meat cubed and floured
2T olive oil
2 cloves garlic, crushed
2 onions chopped
2 C V-8 juice
1C beef broth
1 tsp. black pepper
5 red potatoes, peeled and diced
6 carrots, peeled and thick-sliced
8oz. fresh mushrooms, halved if bigger than bite-sized
In a dutch oven, brown meat in heated oil. Add next 5 ingredients. Simmer over low heat 11/2 hours, or until meat is tender. Add potatoes, carrots and mushrooms; continue cooking another 30 minutes.
