Okra and Tomatoes

1 lb Okra
2 TBL Canola Oil
1 Vidalia onion, chopped
1 (15oz) can Diced tomatoes w/ green chillies with juice
1 tsp Italian seasoning
pepper to taste

Wash okra and pat dry.
Cut off ends of okra and slice in half, length-wise. Heat oil in a 10" cast-iron skillet. Add okra and onion. Cook over
medium heat, stirring constantly.
Continue cooking and stirring until the slime produced by the okra cooks away. Add tomatoes, Italian seasoning and pepper.
Reduce heat and simmer for 10-15 minutes.
Serve beside (or over) rice.
