Sourdough Cinnamon No-Knead Bread

No-Knead Sourdough Cinnamon Bread


1# All purpose flour
1/2 C Cinnamon chips (you can add up to another 1/2C, but no less)
1-1/2 t Kosher salt
1/2 C Sourdough starter (vibrant)
13 oz. Purified water at room temperature

Blend starter with water until all you have is milky colored water, then mix everything together as you normally would. Allow to ferment on the counter for 12-18 hours before shaping.

I made it again last night because the kids are coming over with Alexa today. I used 1/3 whole wheat flour this time.

Sorry that I forgot to get back to you about the cinnamon chips. I get them at the Amish bulk foods store, and have not been able to buy them in any grocery store around here. Last time I bought them I paid $3.50 per pound, and bought a coupler pounds to keep in the freezer. They are available online, but the shipping is expensive. A bakers supply might have them or a cake decorating store, so good luck getting them. Here's what they look like...
