CRAB BISQUE
INGREDIENTS
3 Tbsp. butter
1/2 C. flour
3-1/2 C. milk
2 C. shredded, cooked, crab meat
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. Worcestershire sauce
2-3 Tbsp. catsup
1/2-pint cream or Half & Half
In a 2-qt. saucepan:
Blend together the butter and flour.
Add 2-1/2 cups milk to make a medium white sauce
Add the remaining 1 cup milk, stir and add in all remaining ingredients (except the
cream).
Warm slowly, stirring, to near boiling.
Add 1/2-pint cream.
Reheat to serving temperature.
Add more seasonings to taste, if necessary.INGREDIENTS
