Pea Salad

1 - 15 oz can Lesuer peas, drained
1/2 c. small-diced American cheese
1/2 c. diced onion
2 diced boiled eggs
1 boiled egg quartered long way for garnish
1/2-1 c. Mayonnaise (Start with 1/2 c. and increase as necessary)
1/2 cup black olives, chopped
1/2 tsp. garlic & pepper seasoning
1/4 tsp. (optional) cayenne pepper


Mix all. Let stand for a minimum of two hours in the refrigerator.
Serve with club or another quality cracker.
